As summer winds down, I can’t help but feel a little sad. Though I can’t wait for the cooler temps, football season, and beautiful autumn leaves, I will definitely miss some parts of the summer.
Hanging out on our patio with my wife watching our son play in the backyard while sipping on some lemonade will be one of those things I’ll miss most. Of course I can sip on lemonade whenever I want – or I can up the ante and make these delicious lemon bars!
This simple dessert is super easy to make, and its made using ingredients most people keep on hand – so they are cheap!
They are ultra tangy and tart with just the right amount of sweet balance blended in that you won’t be able to get enough of them. They’re perfect for your little one’s fundraiser bake sale or to bring to the next family party.
Ingredients
- 3/4 cup butter, softened
- 2/3 cup powdered sugar plus more for garnish
- 1 1/2 cups plus 3 TBS flour, divided
- 3 large eggs
- 1 1/2 cups white sugar
- Zest and juice of 2 fresh lemons
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, cream together softened butter and powdered sugar until fully combined. Gradually beat in 1 1/2 cups flour until fully combined.
- Grease the bottom of a 9×13 glass baking pan. Press dough into bottom of pan, making it as even and smooth as possible. Place in oven and bake for 18-20 minutes or until golden brown.
- Meanwhile in a smaller bowl whisk together eggs, sugar, lemon zest, lemon juice and remaining flour until frothy. Pour over hot crust.
- Place pan back in oven and bake for 20-25 minutes or until lemon mixture is set and lightly browned on top.
- Cool completely by placing pan on a cooling rack. Dust with additional powdered sugar. Cut into bars and refrigerate leftovers.
