We made up some delicious Ham Fried Rice the other day, and we needed something to pair it with. What better than some Asian style chicken?!
This sweet and savory take on classic Chinese foods will have you salivating! Its tender with crispy skin. This recipe is super easy to whip up! And since we always grab chicken when its on sale to keep on hand, this may become a go to for whenever we want to mix up our chicken game!
Ingredients
- 3 lbs chicken thighs
- 1 cup pineapple juice
- 2 TBS olive oil
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1 tsp sesame oil
- 1 tsp ground ginger
- 2 TBS rice wine vinegar
- 1 TBS honey
- Sesame seeds
- 1/4 cup chopped green onions (optional, for garnish
Instructions
- Prehead oven to 325 degrees Fahrenheit.
- Place chicken on rack on baking sheet. Place pineapple juice on the pan underneath the chicken. Cover the pan with tinfoil, sealing the chicken and juice inside. Bake for 20 minutes.
- Remove chicken from oven and remove the tinfoil. Increase oven temperature to 375 degrees. Cover chicken in olive oil and bake uncovered for 15 minutes.
- Meanwhile in a small saucepan, combine brown sugar, soy sauce, sesame oil, ground ginger, rice wine vinegar, and honey. Simmer on medium heat, stirring occasionally, until fully combined and warmed through.
- Remove chicken from oven. Increase oven temperature to 425 degrees. Drain juices out of pan. Take chicken off of rack and place directly onto the baking sheet.
- Pour sauce over chicken. Place back in oven for 10 minutes.
- Baste chicken with pan drippings and excess sauce. Cook for another 10 minutes, basting again and sprinkling with sesame seeds. Bake for a final 5 minutes.
- Allow chicken to rest before serving. Garnish with green onions.
